One-Pot Cheesy Tortellini and Sausage
Coming off of that delicious frittata, you turn your head to see that it's getting to be your favorite time of the day ... dinner time! Maybe some nice tortellini should be in order? Tortellini are a ring-shaped pasta resembling a belly button. They are typically stuffed with meats or cheeses, and are served in broth. They appear near large sections of Italian populations.
There are several myths and legends concerning the origins of tortellini. One story involves Lucrezia
Borgia staying in a hotel in Modena, and the host of the hotel being so captivated by her beauty, that he peeped through her keyhole. When he only saw her belly button, he was inspired to create the tortellini. There is a similar story where Lucrezia is the Roman Goddess Venus.
In comparison to tortelloni, tortellini are much smaller, and meat filling are much more common in tortellini than in tortelloni. Also, tortelloni are rarely served in broth, while tortellini frequently are cooked.

Recipe
Yield: This dish yields 6 servings
Time: This dish takes 10 minutes to prepare and 15 minutes to cook, making a total of 25 minutes.
Ingredients
1 lb cooked pork sausage, sliced
1 small yellow onion, diced
2 cloves garlic, finely chopped
1 jar organic pasta sauce tomato basil
1 can organic diced tomatoes, undrained
1/2 cup Progresso™ chicken broth
20 oz refrigerated cheese tortellini
1 cup shredded mozzarella cheese
6 fresh basil leaves, chopped
Instructions
1. In 12-inch skillet, cook sliced sausage, onion and garlic 5 to 7 minutes or until onion softens and sausage starts to brown.
2. Stir in sauce, tomatoes, chicken broth and tortellini. Cover and simmer 8 to 10 minutes, stirring occasionally, until tortellini is cooked.
3. Remove from heat; sprinkle with cheese and basil. Serve when cheese has melted.
4. Enjoy!
