Australian Breakfast With Vegemite

Whether it be a lazy Sunday or a regular weekday morning, this common Australian breakfast is the perfect way to start off your day on the right foot.

When one hears the word Australia, one of two things should come to mind: kangaroos... and vegemite. This salty succulent paste is considered a large part of Australia's heritage as this obsession has become a unique and loved symbol of the Australian nation since its debut in the early 1900's.

Much like the classic PB&J, vegemite sandwiches-which are an acquired taste-are enjoyed daily by Aussies. In fact, vegemite, which is yeast extract, is in 9 out of 10 pantries in an average Australian household and about 235 jars are manufactured with each passing minute!

Recipe:

Time: 5-10 minutes

Yield: 1 serving

Ingredients:

1 Slice of Your Favorite Bread

Vegemite

Butter or Margarine (softened)

Baby Tomatoes

Mushrooms

Eggs

Instructions:

1. Toast the bread of your choice using the method of your choice (oven, toaster, etc.).

2. In a pan, fry washed and sliced mushrooms and baby tomatoes using a medium sized frying pan.

3. While your mushrooms and tomatoes are frying, boil water in a pot and boil your desired amount of eggs until they are soft boiled (presumably 60 seconds in boiling water).

4. Spread butter and a thin layer of vegemite on your toasted bread.

5. Lightly salt and pepper the mushrooms and tomatoes based on your serving size. Let them cool.

6. Remove mushrooms and tomatoes as well as the soft boiled eggs from their pot/pan and place on toasted bread.

7. Enjoy!
