Chinese Chicken Fried Rice

Fried rice is the most typical Chinese household dish there is. Usually made in a wok, it combines rice with various meats and vegetables that results in a quintessential comfort food that is perfect for any meal.

The history of fried rice isn’t certain but it is believed to originate from China during the Sui Dynasty. It was an ancient dish introduced to help repurpose leftover food. Many believe it was invented in the city of Yangzhou, in the Jiangsu province. Nowadays, Yangzhou fried rice, commonly labelled as “special fried rice”, continues to win the heart of many as it is still very popular whether in China or the United States.

In modern China, fried rice is profoundly demanded in southern China, where rice is the staple grain. It is a very common street food that can be found sold by competing vendors throughout the south.

Leftover rice is ideally used since it loses moisture in the fridge and it is important to keep liquids to a minimum in this dish. By adding a variety of meats and vegetables, this nutritious mouthwatering dish is bound to please all your friends and family all the while helping you clean out your fridge!

Recipe:

Time: 45 minutes

Yield: 4 servings

Ingredients:

4 cups cooked rice

½ cups carrots, diced

2 stalks scallion

2 eggs

About .5 lb. chicken meat, cut into bite-sized chunks

¼ tsp sugar

2 tbsp soy sauce, divided

2 tbsp oil, divided

¼ tsp black pepper

Instructions:

  1. In a bowl, combine the chicken meat, sugar, and one tablespoon soy sauce. Mix well to make sure the meat is well coated with the seasoning. Allow this to sit and marinate for 30 minutes.

  2. Heat 1 tablespoon oil in a pan over medium-high heat. Add in the marinated chicken meat and stir-fry. Allow it to sit a little to develop caramelization on the meat. Add the carrots and stir-fry for an additional minute. Remove from the pan.

  3. In the same pan, heat the remaining tablespoon of oil over medium heat. Crack in the two eggs and allow it to cook a little before stirring it.

  4. When the egg is almost done, add in your rice. Make sure to stir frequently and break apart the grains to keep the rice loose. When the rice has warmed up, add in the remaining one tablespoon soy sauce. Mix well to distribute the flavor and coloring.

  5. Add the chicken and carrot. Mix well before adding the black pepper.

  6. Turn off the heat and add the scallions. Mix until it is well distributed.

  7. Enjoy!
